Foundations – 22 February 2018

Scottish study tour? Och Aye!

The release is coming soon. Our Scottish study tour will take place 9-16 June 2018. The tour has been designed for Australian distillers and will take you behind the scenes of some of Scotland’s finest distilleries, cooperages and businesses. Hosted by our Scottish friend Alan Barclay and includes visits to 8 distilleries and special events at the JW Blue Room, St Andrews and the Scotch Malt Whisky Society.

News from the barrel

7K a reality for new distillers

One of our newest distilleries in Tasmania is the 7k distillery, sitting atop a hill overlooking Brighton a mere 25 minutes from Hobart. Harry and Tyler had a bit of a plan and converted an old shipping contained into something quite fabulous. Making gin and whisky where are promising to create something quite unique in the Tasmanian distilling scene. Congrats fellas.

A fabulous gin thing

While we’re better known for our love of Whisky, there is no doubt that great gins are on our list. So recently we found a group of friends, asked along our friend Suzy from Spring Bay Distillery and had a tipple or two and talked about the process of gin making.  Thanks Spring Bay, Nonesuch and Southern Wild Distillery for our samples for the night.

Dasher + Fisher gin award in HK

Congratulations to George and The Southern Wild Distillery team for their recent trophy and a Gold Medal for the Best London Dry Gin at the 2017 Cathay Pacific Hong Kong International Wine and Spirit Competition. Charles Oates experience open

Tasmania’s favourite apple shed, making some of Tassie’s tastiest cider is now also making Fine Apple Brandy at the Apple Shed in Huonville. A recent addition to the offering a 1.5 hour experience with the distiller tasting both the cider that made them famous and the spirits that will continue to impress. Get yourself there while you are in Tasmania. Check it out.

Darby Norris on its way

Congrats to Jeff and the Darby Norris Distillery at Kelso, northern Tasmania. Like anyone who has started their own distillery Jeff recently received his approval and is officially on his way. A kissing spirit from Belgrove

Our favourite inventor Peter Bignell from Belgrove Distillery has once again proved why he is a master of spirit creativity.  His Kissing A Stranger spirit has been created from the spit waste bucket at the Rootstock Festival. He has collected and distilled it to create the new brew. See the story here

REPORT: Our September IBD week in Melbourne

Our Melbourne week in September was spent with 30 of the coolest people we know. Five days of training, covering the Institute of Brewing and Distilling’s General Certificate. Starting at Starward Distillery, it took in Craft and Co in Collingwood and visited Colonial Brewing. Hosted by Scottish whisky guru Alan Barclay with Australia’s Ian Thorn from Starward, it was a busy week of learning and provided great contacts for students. Highlights included talks from David Vitale (Starward), networking with mates, a visit from Hawkers Beer, tours of Starward and Craft and Co and our Melbourne Distillers Dinner with guest Stu Gregor from Four Pillars and the Australian Distillers Association.

Thanks to our special guests covering tax and excise (ATO), distilling safety (Worksafe) and the business of distilling (Troy from Experience Consulting) and Alan for education our noses and palates with a tipple or two. The next one is in Tasmania 12-16 March 2018.

IBD Distilling exams

Congratulations to all the distillers who recently took part in the IBD General Certificate of Distilling and Diploma exams. Pass rates for those who have been undertaking the Certificate training has been very high. The next IBD General Certificate of Distilling exams will take place in May and November 2018.

Congratulations to the Australian Distillers Association for a very successful national conference in Hobart recently. We were lucky enough to join 80 of the best at the McHenry Distillery to hear about what’s happening in Australian distilling. For more info about the ADA visit www.australiandistillers.org.au
